Bookings now open for Björn Frantzén's first Middle East restaurant

FZN set to launch at Atlantis, The Palm hotel in Dubai

Atlantis, The Palm is partnering with renowned Swedish chef Björn Frantzén to launch fine dining restaurant FZN – and bookings are now open.

Launching on Friday 8 November 2024, guests can look forward to a modern European tasting menu with Japanese influences at FZN costing AED2,000 (US$545).

Frantzén is famous for being at the helm of sibling three-Michelin-starred restaurants, the eponymous flagship Frantzén in Stockholm and Zén in Singapore.

Guests will embark on a guided house tour before entering the dining room that accommodates just 27 people.

This space includes 13 seats around the open kitchen, offering a front-row view of the culinary craftsmanship, as well as four tables for up to 14 guests.

The service team will guide diners through nine courses crafted using a blend of Frantzén’s innovative techniques and seasonal ingredients representing Nordic flavours.

Dishes can be paired with wines from a selection of more than 1,200 labels, including some from smaller lesser known producers as well as a non-alcoholic pairing. 

FZN has enlisted a diverse team representing 20 nationalities, led by General Manager Karin Ågren. Ågren, who has been with The Frantzén Group for seven years, was also part of the management team at Frantzén in Stockholm.

Executive Chef Torsten Vildgaard, whose background includes opening his own Michelin-starred restaurant and more than a decade at the world-renowned three-Michelin-starred Noma in Denmark, will oversee the kitchen.

FZN is one of two new restaurants opening at Atlantis, The Palm, with the social dining concept Studio Frantzén also set to debut later this year.

Open from Tuesday to Saturday, seatings will run from 7pm to 8:15pm. Guests must be aged 13 or above.
